Khichuri Mix is a mixture of rice and nutritious pulses.
Khichuri is the Indian equivalent of chicken soup. A wholesome and comforting meal, it is made with a combination of rice and either green or yellow lentils. Lightly spiced, it can be eaten plain or with curd.

Wash the rice mix and keep it aside.
Heat 4tb spoons of ghee (oil) of your choice, add chopped onions, when golden, add the spices , and fry for 2/3 mins. Add the khichuri mix and fry for another 5 mins until crispy dry. Add about 700ml of water. Let it boil and reduce heat and cook for about 30 mins until khichuri is cooked. ( May add extra ghee and cilantro leaves on top when serving ).
